My feeling is that, if I’m going to bring something to a party, I’m going to make sure it’s something my family can eat. When someone says, “bring dessert” this may not be so easy. Gluten free families don’t necessarily have the option of running to the store and picking up something that will be tasty for all, besides the fact that buying 20 something gluten free cupcakes or a gluten free cake can be very expensive. Sometimes I just don’t have any time to make something fancy. When that happens, this is my go to recipe for easy gluten free fudge. People always think it’s so much more complicated than it actually is. Now I never said it was healthy…..but it is a great dessert. And honestly, I LOVE chocolate!
Easy Gluten Free Fudge
1 oz can of gluten free chocolate frosting (I like to use Betty Crocker chocolate frosting but anything chocolate and gluten free will do)
2 ½ cups of chocolate chips (I like Nestle’s the best, but Enjoy Life makes a version that’s vegan, gluten, dairy, soy, sulfite, peanut, tree nut, casein and egg free)
Take a square 8×8 or 9×9 baking dish and coat with a thin layer of butter or spray a thin coat of oil with a Misto. Set aside.
Take a nonstick coated pan and put on a very low heat. Add chocolate chips and can of frosting.
Use a rubber spatula to continuously stir until the chocolate chips are completely melted. Then, pour out the mixture into the baking pan and spread smooth.
Finally, put the pan into the refrigerator until cool and cut into small pieces. It’s very rich so a little goes a long way. Makes 16-36 depending on how small you cut your pieces.
That’s it! When I tell people how easy it is they don’t believe me.
